I'll close with a note about an event that happened about ten years ago which I think of as being similar to the kinds of meals you'd be likely to find in an NYC Cafe. I ended up in a small town outside of Belfast with a group of people I hardly knew and had only recently met while traveling to Ireland for a wedding. She asked some questions about what everyone was willing to eat. She then headed off into the streets looking for supplies.

One of the guys on the trip began to gripe about the lack of food and the delay. For me, the summer of 1999 was a fascinating period. She prepared a small meal for us all once we were comfortable on the side of the road; we shared, ate, laughed, and chatted for a while before boarding the bus. It all boiled down to ensuring that everyone had something to eat. On the way back to Belfast, we were waiting for a bus that had broken down. If you wish to operate your own cafe, the same concept holds true.

One of the girls took his comment seriously, and being a girl with some experience under her belt, she immediately took charge of the situation. The bread, meat, read much more and chips were delicious, and it was a fun evening.
